Mom’s Famous Cream Puffs

Ingredients:

Cream Puffs:

  • 1 stick butter (8 tablespoons)
  • 1 cup water
  • 1 teaspoon vanilla
  • 4 eggs
  • 1 cup flour

Mom’s Famous Filling:

  • 1 pint cream
  • 1 package (3.4 ounces) instant vanilla pudding mix
  • 1/3 cup milk

Instructions:

  1. Prepare the Dough:
    • In a medium saucepan, bring the butter, water, and vanilla to a boil over medium heat.
    • Add the flour and stir constantly until the mixture comes away from the sides of the pan and forms a ball.
    • Remove the dough from the heat and let it cool for a few minutes.
    • Beat in the eggs one at a time until the mixture is smooth and glossy.
  2. Bake the Cream Puffs:
    • Preheat the oven to 400°F (200°C).
    • Using a spoon or a pastry bag, place dollops of dough onto baking sheets lined with parchment paper. Make sure to leave space between each puff.
    • Bake in the preheated oven for about 25-30 minutes or until the cream puffs are golden brown and puffed up.
    • Allow the cream puffs to cool completely on a wire rack.
  3. Prepare the Filling:
    • In a mixer, beat the cream, instant vanilla pudding mix, and milk together until the mixture thickens to a consistency similar to whipped cream.
  4. Assemble the Cream Puffs:
    • Once the cream puffs have cooled, cut them in half.
    • Fill each puff generously with the prepared filling using a spoon or a pastry bag.
    • Sprinkle the filled cream puffs with powdered sugar before serving.
