Mojo Potatoes Recipe

These potatoes are delicious to grill or eat because they are soft and tender on the inside. They are very popular at Shakey’s Pizza and very addictive. Here’s a homemade version of the recipe along with a special sauce.

Ingredients:

  • Potatoes:
    • 500 to 600 grams red potatoes (washed thoroughly, cleaned, and dried)
    • 1 large egg, peeled and cut into 1/2-inch pieces
    • 1 cup milk
    • 1/2 cup all-purpose flour
    • 1/2 cup cornstarch
    • 1/2 teaspoon salt
    • 1/4 teaspoon red pepper
    • 3/4 teaspoon garlic powder
    • 1/4 teaspoon thyme
    • 1/4 teaspoon ground black pepper
    • 1/2 teaspoon paprika
  • Sauce:
    • 1/2 cup mayonnaise
    • 1/4 teaspoon garlic powder
    • 1/2 teaspoon lemon juice
    • Salt, pepper, and smoked paprika to taste

Instructions:

  1. Prepare the Potatoes:
    • Slice the potatoes into 1/4-inch thick rounds.
    • Mix the egg and milk in a bowl.
  2. Make the Coating:
    • In another bowl, combine all-purpose flour, cornstarch, salt, red pepper, garlic powder, thyme, ground black pepper, and paprika.
  3. Coat the Potatoes:
    • Dip the potato slices into the egg and milk mixture.
    • Then coat them with the flour mixture. Shake off any excess flour mixture. Set aside the coated potatoes for about ten minutes.
  4. Heat the Oil:
    • Heat oil in a deep fryer or large pan to 160 degrees Celsius (320 degrees Fahrenheit). To check if the oil is hot enough, you can dip a wooden skewer into the oil. If bubbles form around it, the oil is ready.
  5. Fry the Potatoes:
    • Carefully place the potato slices into the hot oil without overcrowding the pan.
    • Fry until golden brown, about 2-3 minutes per side. If the potatoes brown too quickly, lower the heat.
    • Remove the potatoes and place them on a cooling rack to drain excess oil.
  6. Final Fry:
    • Increase the oil temperature to high heat.
    • Fry the potatoes again for another 30 seconds to make them extra crispy.
    • Remove and place on a cooling rack to drain excess oil.
  7. Prepare the Sauce:
    • In a small bowl, combine mayonnaise, garlic powder, lemon juice, salt, pepper, and smoked paprika. Mix well.
  8. Serve:
    • Top the crispy mojo potatoes with your favorite sauce and enjoy!
