Ingredients:
- 2 1/2 cups shredded coconut (sweetened or unsweetened)
- 1 cup sweetened condensed milk
- 1 teaspoon vanilla extract
- 2 cups semi-sweet chocolate chips or dark chocolate, melted
- 2 tablespoons coconut oil (optional, for a smoother chocolate coating)
Instructions:
1. Prepare the Coconut Mixture:
- In a large bowl, mix together the shredded coconut, sweetened condensed milk, and vanilla extract until well combined. The mixture should be sticky and hold together when pressed.
2. Shape the Bars:
- Line a baking sheet with parchment paper. Using your hands, shape the coconut mixture into small rectangular bars or bite-sized pieces. Place them on the prepared baking sheet.
3. Chill the Bars:
- Place the baking sheet in the refrigerator and chill the coconut bars for at least 30 minutes, or until they are firm.
4. Melt the Chocolate:
- In a microwave-safe bowl, combine the chocolate chips and coconut oil (if using). Microwave in 30-second intervals, stirring between each interval, until the chocolate is fully melted and smooth.
5. Coat the Bars:

- Using a fork or dipping tool, dip each chilled coconut bar into the melted chocolate, making sure to coat it completely. Allow any excess chocolate to drip off, then place the coated bars back on the parchment-lined baking sheet.
6. Set the Chocolate:
- Once all the bars are coated in chocolate, return the baking sheet to the refrigerator and chill for another 30 minutes, or until the chocolate is set.
7. Serve and Enjoy:
- Once the chocolate is fully set, your homemade chocolate-covered coconut bars are ready to enjoy. Store any leftovers in an airtight container in the refrigerator.
These bars are perfect for satisfying your sweet tooth and make for a delightful homemade treat. Enjoy
