Ingredients:
- 2 cups grated zucchini (squeeze out excess moisture)
- 1 cup grated carrots
- 1 cup finely chopped green onions
- 1 cup grated cheese (such as mozzarella or cheddar)
- 1/2 cup flour
- 2 eggs
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon paprika
- 2 tablespoons vegetable oil for frying
Instructions:
- Prepare the Vegetables:
- Grate the zucchini and carrots. Squeeze out excess moisture from the zucchini using a cheesecloth or a clean kitchen towel.
- Finely chop the green onions.
- Mix Ingredients:
- In a large bowl, combine the grated zucchini, carrots, green onions, grated cheese, and flour.
- In a separate bowl, beat the eggs and then add them to the vegetable mixture.
- Add salt, black pepper, garlic powder, and paprika. Mix everything until well combined.
- Form the Rolls:
- Take a small portion of the mixture and shape it into a small log or roll using your hands. Repeat with the remaining mixture.
- Fry the Rolls:
- Heat vegetable oil in a large skillet over medium heat.
- Place the rolls in the skillet and cook them for about 3-4 minutes on each side or until they are golden brown and crispy.
- Serve:
- Remove the rolls from the skillet and place them on a plate lined with paper towels to absorb any excess oil.
- Serve hot with your favorite dipping sauce.
