CREAMY BEEF TACO SOUP
Ingredients:
2 pounds ground beef
• 1 small onion, diced
• 1 bell pepper, diced (any color works well!)
• 2 cloves garlic, minced
• 24 ounces beef broth
• 28 ounces canned diced tomatoes (crushed or other tomatoes work too)
• 4 ounces salsa
• 2 packages store-bought taco seasoning
• 4 ounces cream cheese, softened
• 1 cup heavy cream
• 2 cups cheddar cheese
PREPARATION :
Fry the ground hamburger, onion and pepper at medium intensity until the meat is cooked through.
Add the garlic cloves, beef broth, tomatoes, salsa and taco mix. Place the pot on high for 2 minutes. When cooking is complete, drain the laundry normally.Gradually add mild cheddar cream, cream and cheddar cheese to the pot. Mix until the cheese is liquefied and the soup is combined.
Serve and garnish with your favorite taco toppings.
Notes: Always use freshly ground cheddar cheese! Bundled, pre-ground Cheddar cheese is covered in cellulose (a woody mass) that retains moisture and prevents the Cheddar cheese from sticking.Unfortunately, this also prevents the cheddar from becoming really soft.
• Feel empowered to make some substitutions. Save the onions for flavor, but feel free to add more vegetables. Pumpkin, zucchini or even cauliflower rice taste perfect. Beans and corn are also great (if you’re not on a ketogenic diet).As an alternative to hamburger, you can also use ground chicken or turkey.
