Classic Cheesecake Recipe

Ingredients:

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the Filling:

  • 4 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 1/4 cup all-purpose flour

Instructions:

  1. Prepare the Crust:
    • Preheat the oven to 325°F (160°C).
    • In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are evenly moistened.
    • Press the mixture firmly into the bottom of a 9-inch springform pan. Use the back of a spoon or a measuring cup to pack it down tightly.
    • Bake the crust for 10 minutes, then set it aside to cool while you prepare the filling.
  2. Prepare the Filling:
    • In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
    • Add the sugar and vanilla extract, and continue to beat until well combined.
    • Add the eggs, one at a time, beating well after each addition.
    • Mix in the sour cream and flour until the batter is smooth and no lumps remain.
  3. Bake the Cheesecake:
    • Pour the cream cheese filling over the cooled crust, spreading it evenly.
    • Place the springform pan in a large roasting pan. Fill the roasting pan with hot water until it reaches halfway up the sides of the springform pan (this helps prevent cracking).
    • Bake the cheesecake for 55-70 minutes, or until the center is almost set but still slightly jiggly.
    • Turn off the oven and leave the cheesecake inside with the door slightly open for about 1 hour.
  4. Cool and Chill:
    • Remove the cheesecake from the oven and let it cool to room temperature.
    • Once cooled, refrigerate the cheesecake for at least 4 hours, preferably overnight, to allow it to set completely.
  5. Serve:
    • Before serving, run a knife around the edge of the pan to loosen the cheesecake.
    • Remove the sides of the springform pan and transfer the cheesecake to a serving plate.
    • Garnish with your favorite toppings (fresh fruit, whipped cream, chocolate sauce, etc.) if desired.
