Ingredients:
For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
For the Filling:
- 4 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup sour cream
- 1/4 cup all-purpose flour
Instructions:
- Prepare the Crust:
- Preheat the oven to 325°F (160°C).
- In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are evenly moistened.
- Press the mixture firmly into the bottom of a 9-inch springform pan. Use the back of a spoon or a measuring cup to pack it down tightly.
- Bake the crust for 10 minutes, then set it aside to cool while you prepare the filling.
- Prepare the Filling:
- In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
- Add the sugar and vanilla extract, and continue to beat until well combined.
- Add the eggs, one at a time, beating well after each addition.
- Mix in the sour cream and flour until the batter is smooth and no lumps remain.
- Bake the Cheesecake:
- Pour the cream cheese filling over the cooled crust, spreading it evenly.
- Place the springform pan in a large roasting pan. Fill the roasting pan with hot water until it reaches halfway up the sides of the springform pan (this helps prevent cracking).
- Bake the cheesecake for 55-70 minutes, or until the center is almost set but still slightly jiggly.
- Turn off the oven and leave the cheesecake inside with the door slightly open for about 1 hour.
- Cool and Chill:
- Remove the cheesecake from the oven and let it cool to room temperature.
- Once cooled, refrigerate the cheesecake for at least 4 hours, preferably overnight, to allow it to set completely.
- Serve:
- Before serving, run a knife around the edge of the pan to loosen the cheesecake.
- Remove the sides of the springform pan and transfer the cheesecake to a serving plate.
- Garnish with your favorite toppings (fresh fruit, whipped cream, chocolate sauce, etc.) if desired.
