Ingredients:
- 2 cups crushed graham crackers
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 4 packages (8 ounces each) cream cheese, softened
- 1 1/4 cups granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup sour cream
- 1/4 cup all-purpose flour
Instructions:
- Preheat Oven:
- Preheat your oven to 325°F (163°C).
- Grease a 9-inch springform pan with butter or nonstick cooking spray.
- Prepare Crust:
- In a bowl, combine the graham cracker crumbs, 1/4 cup granulated sugar, and melted butter. Mix until crumbs are evenly coated.
- Press the crumb mixture firmly into the bottom of the prepared springform pan to form an even layer.
- Bake the base in the preheated oven for 10 minutes. Remove from oven and allow to cool while you prepare the filling.
- Prepare Filling:
- In a large bowl, beat the cream cheese and 1 1/4 cups granulated sugar until smooth and creamy.
- Add the eggs one at a time, beating well after each addition. Scrape down the sides of the bowl to ensure everything is well mixed.
- Mix in the vanilla extract, sour cream, and flour until the mixture has a smooth, even consistency.
- Bake Cheesecake:
- Pour the cheesecake batter over the cooled crust in the springform pan and spread it evenly with a spatula.
- Place the springform pan on a baking sheet to catch any drips, then place it in the oven.
- Bake the cheesecake for 55 to 60 minutes or until the edges are set but the center still jiggles slightly when shaken.
- Cool Cheesecake:
- Turn off the oven and leave the cheesecake in the oven with the door open for about an hour to allow it to cool slowly.
- Once cooled in the oven, remove the cheesecake and allow it to cool completely to room temperature.
- Cover the cheesecake and refrigerate for at least 4 hours or overnight to set.
- Serve:
- Before serving, run a knife along the edge of the cheesecake to loosen it from the pan.
- Release the springform pan and transfer the cheesecake to a serving plate.
- Cut the cheesecake into portions and serve cold. Optionally, top each slice with whipped cream, fresh berries, or a drizzle of caramel or chocolate sauce.
