Buckeye Brownie Cookies

Ingredients:

For the Cookies:

  • 1 box brownie mix (approximately 18.4 oz)
  • 1/4 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup vegetable oil
  • 1/4 cup water

For the Peanut Butter Filling:

  • 1 cup creamy peanut butter
  • 1 cup powdered sugar

For the Chocolate Topping:

  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon shortening (or butter)

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Prepare the Cookie Dough: In a large mixing bowl, combine the brownie mix, flour, eggs, vegetable oil, and water. Mix until well blended.
  3. Form the Cookies: Drop tablespoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  4. Bake the Cookies: Bake in the preheated oven for 8-10 minutes or until the edges are set and the centers are slightly soft. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  5. Prepare the Peanut Butter Filling: In a medium bowl, mix together the peanut butter and powdered sugar until smooth. Roll into small balls (about 1 teaspoon each).
  6. Top the Cookies with Peanut Butter: Once the cookies are cooled, press a peanut butter ball onto the center of each cookie, flattening it slightly.
  7. Prepare the Chocolate Topping: In a microwave-safe bowl, combine the chocolate chips and shortening. Microwave in 30-second intervals, stirring in between, until the chocolate is melted and smooth.
  8. Top the Cookies with Chocolate: Spoon or pipe the melted chocolate over the peanut butter filling on each cookie.
  9. Let the Chocolate Set: Allow the cookies to sit at room temperature until the chocolate is set. You can also refrigerate them to speed up the process.
