Peach Butter Cake Recipe

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 2-3 ripe peaches, peeled, pitted, and sliced
  • Powdered sugar for dusting

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C). Grease a 9×9 inch baking pan or line it with parchment paper.
  2. Prepare Dry Ingredients:
    • In a medium bowl, whisk together the flour, baking powder, and salt.
  3. Cream Butter and Sugar:
    • In a large bowl, cream together the butter and granulated sugar until light and fluffy.
  4. Add Eggs and Vanilla:
    • Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Combine Wet and Dry Ingredients:
    • Gradually add the dry ingredients to the butter mixture, alternating with the milk, beginning and ending with the dry ingredients. Mix just until incorporated.
  6. Add Peaches:
    • Gently fold in the sliced peaches.
  7. Bake:
    • Pour the batter into the prepared baking pan and spread it evenly. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool and Dust:
    • Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely. Dust with powdered sugar before serving.
