Crispy Vegetable Rolls

Ingredients:

  • 2 cups grated zucchini (squeeze out excess moisture)
  • 1 cup grated carrots
  • 1 cup finely chopped green onions
  • 1 cup grated cheese (such as mozzarella or cheddar)
  • 1/2 cup flour
  • 2 eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 2 tablespoons vegetable oil for frying

Instructions:

  1. Prepare the Vegetables:
    • Grate the zucchini and carrots. Squeeze out excess moisture from the zucchini using a cheesecloth or a clean kitchen towel.
    • Finely chop the green onions.
  2. Mix Ingredients:
    • In a large bowl, combine the grated zucchini, carrots, green onions, grated cheese, and flour.
    • In a separate bowl, beat the eggs and then add them to the vegetable mixture.
    • Add salt, black pepper, garlic powder, and paprika. Mix everything until well combined.
  3. Form the Rolls:
    • Take a small portion of the mixture and shape it into a small log or roll using your hands. Repeat with the remaining mixture.
  4. Fry the Rolls:
    • Heat vegetable oil in a large skillet over medium heat.
    • Place the rolls in the skillet and cook them for about 3-4 minutes on each side or until they are golden brown and crispy.
  5. Serve:
    • Remove the rolls from the skillet and place them on a plate lined with paper towels to absorb any excess oil.
    • Serve hot with your favorite dipping sauce.
