Apple Fritters Recipe

Ingredients:

For the Fritters:

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 2/3 cup whole milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups peeled and diced apples (such as Granny Smith or Honeycrisp)
  • Vegetable oil (for frying)

For the Glaze:

  • 2 cups powdered sugar
  • 1/4 cup milk
  • 1 teaspoon vanilla extract

Instructions:

Prepare the Fritters:

  1. In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, salt, ground cinnamon, and ground nutmeg.
  2. In another bowl, whisk together the milk, eggs, and vanilla extract until well combined.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  4. Fold in the diced apples.

Heat the Oil:

  1. Pour vegetable oil into a large, heavy-bottomed pot to a depth of about 2 inches.
  2. Heat the oil over medium heat until it reaches 375°F (190°C). Use a thermometer to ensure the oil stays at the correct temperature.

Fry the Fritters:

  1. Carefully drop 1/4 cup portions of the batter into the hot oil, frying only a few fritters at a time to avoid overcrowding the pot.
  2. Fry the fritters for about 2-3 minutes per side, or until they are golden brown and cooked through.
  3. Use a slotted spoon to remove the fritters from the oil and place them on a paper towel-lined plate to drain any excess oil.

Make the Glaze:

  1. In a medium bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth and well combined.

Glaze the Fritters:

  1. While the fritters are still warm, dip each one into the glaze, coating them completely.
  2. Place the glazed fritters on a wire rack set over a baking sheet to allow any excess glaze to drip off.
  3. Let the glaze set for a few minutes before serving.

Serve:

  1. Enjoy the apple fritters warm, either on their own or with a scoop of vanilla ice cream.
