Homemade Meatballs with Tomato Sauce and Penne Pasta
Ingredients
1 medium fresh egg
1 teaspoon SuperValu dried mixed herbs
5 tbsp SuperValu fresh breadcrumbs
1 clove of garlic SuperValu
450 g SuperValu Irish minced beef
1 medium SuperValu onion
2 teaspoons SuperValu tomato puree

100ml beef stock
75ml fresh cream (optional)
4 – mushrooms, thinly sliced 1 tablespoon SuperValu brown sugar
400g SuperValu chopped Tomatoes
1 teaspoon dried SuperValu herb mixture
2 cloves SuperValu garlic, crushed
1 medium SuperValu onion, chopped
400 g SuperValu paste
0 – SuperValu salt
Instructions:
Preheat the oven to: 180°C/350 °F/ Gas mark 4.
Preparing the meatballs
Place the meat with the onion and garlic in a large glass bowl and add the breadcrumbs, tomato puree and dried herbs.
Add the egg to mix the ingredients.
Mix the ingredients well with a wooden spoon or your hands.
With wet hands, shape the meat into meatballs.Cook the meatballs in a large, deep skillet for 3 to 4 minutes, then place them in the preheated oven for 15 to 20 minutes to ensure they are cooked through.
Making the Sauce
Sauté the onion, mushrooms and garlic until soft and tender (about 3 to 5 minutes).
Add herb mixture, chopped tomatoes and brown sugar.
Let the mixture bubble for about 10 minutes.
If you are using the cream, add it to the sauce now to enrich it.Adjust the seasoning and add the meatballs to the sauce.
Cook pasta in a large pot of boiling, lightly salted water according to package directions.
Drain the pasta and season with a little salt and pepper.
If you wish, you can add a piece of butter to the paste at this point.
Serve the pasta and pour over the meatballs and pasta sauce.
