No-Bake Orange Cream Cheesecake<
📋 INGREDIENTS:
12 ounces vanilla wafers
1 1/2 cups granulated sugar, divided
4 tablespoons (1/2 stick) unsalted butter, melted
2 (8 ounce each) packages cream cheese, at Room temperature softened
2 cups heavy cream
1 box (3 ounces) orange gelatin
1 cup boiling water
1/2 cup powdered sugar
1/2 teaspoon vanilla extract
zest of one orange
👩🍳 INSTRUCTIONS:
1️⃣ Process the vanilla wafers in a food processor until they look like crumbs. Add 1/2 cup granulated sugar and melted butter and stir to combine.
2️⃣ Spray a 9-inch springform pan generously with cooking spray.Press the waffle mixture into the bottom of the pan and slightly up the sides. Chill in the freezer for at least 30 minutes.
3️⃣ In a large bowl, beat cream cheese and 1 cup granulated sugar with a hand mixer until smooth and creamy. Put aside.
4️⃣ In a separate container, mix the orange gelatin and boiling water until dissolved.Put aside.
5️⃣ In a medium bowl, beat heavy cream, vanilla extract, powdered sugar and orange zest until stiff peaks form. Divide the whipped cream mixture in half.
6️⃣ Mix half of the whipped cream mixture with the orange-gelatin mixture and the other half with the cream cheese mixture.
7️⃣ Spread each mixture alternately in the pan, starting with the cream cheese mixture and ending with the whipped cream mixture.8️⃣ Let the cheesecake rest in the refrigerator for at least 4 hours or overnight before serving. This allows the flavors to mingle and the cheesecake to set perfectly.
