SLOW COOKER TORTELLINI AND SAUSAGE SOUP
Slow cooker tortellini, sausage and kale soup. A super easy and delicious meal that only takes 10 minutes to prepare.
INGREDIENTS
2 mild or hot sausages (still frozen, makes cutting easier)
4 garlic cloves, minced
1 medium onion, diced
2 14.5-ounce cans, roasted garlic, diced tomatoes
6 cups low-sodium chicken broth
2 Bay leaves
2 teaspoons Italian seasoning
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon crushed red pepper flakes
1 pound frozen no-thawing cheese tortellini
2 cups coarsely chopped kale
crushed red pepper flakes to taste
Parmesan cheese, to serve as desired
INSTRUCTIONS
Place sausage, garlic, onions, tomatoes, chicken broth, bay leaves, Italian seasoning, garlic powder, onion powder and crushed red pepper flakes in a slow cooker.
Cook on low heat for 6-8 hours or on high heat for 4 hours.Add frozen tortellini and kale 30 minutes before serving.
Season with salt and pepper and add more crushed red pepper flakes if necessary. Serve immediately with Parmesan cheese.
