Citrus Swirl Cheesecake

Ingredients

For the Crust:

  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, melted

For the Cheesecake Filling:

  • 3 packages (8 ounces each) cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • Zest of 1 orange
  • Zest of 1 lemon
  • 2 tablespoons freshly squeezed orange juice
  • 2 tablespoons freshly squeezed lemon juice

For the Citrus Swirl:

  • ¼ cup orange marmalade
  • ¼ cup lemon curd

For the Decoration:

  • Whipped cream
  • Orange slices
  • Lemon slices
  • Dehydrated citrus slices (optional)
  • Mint leaves (optional)

Instructions

For the Crust:

  1. Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan.
  2. In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until well combined.
  3. Press the mixture firmly into the bottom of the prepared pan.
  4. Bake the crust for 10 minutes, then set aside to cool.

For the Cheesecake Filling:

  1. In a large bowl, beat the cream cheese until smooth and creamy.
  2. Add the sugar and vanilla extract, and beat until well combined.
  3. Add the eggs one at a time, beating well after each addition.
  4. Mix in the sour cream, orange zest, lemon zest, orange juice, and lemon juice until well combined.

For the Citrus Swirl:

  1. Spoon the orange marmalade and lemon curd over the cheesecake batter.
  2. Use a knife or skewer to swirl the marmalade and curd into the batter.

To Bake:

  1. Pour the cheesecake filling over the cooled crust in the springform pan.
  2. Bake the cheesecake for 55-65 minutes, or until the center is almost set (it should still have a slight jiggle in the middle).
  3. Turn off the oven, crack the oven door, and let the cheesecake cool in the oven for 1 hour.
  4. Remove the cheesecake from the oven and let it cool to room temperature.
  5. Refrigerate for at least 4 hours, or overnight.

For the Decoration:

  1. Before serving, top the cheesecake with whipped cream.
  2. Arrange the orange slices, lemon slices, and dehydrated citrus slices on top.
  3. Garnish with mint leaves if desired.
