Ingredients
For the Crust:
- 1 ½ cups graham cracker crumbs
- ¼ cup granulated sugar
- ½ cup unsalted butter, melted
For the Cheesecake Filling:
- 3 packages (8 ounces each) cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- Zest of 1 orange
- Zest of 1 lemon
- 2 tablespoons freshly squeezed orange juice
- 2 tablespoons freshly squeezed lemon juice
For the Citrus Swirl:
- ¼ cup orange marmalade
- ¼ cup lemon curd
For the Decoration:
- Whipped cream
- Orange slices
- Lemon slices
- Dehydrated citrus slices (optional)
- Mint leaves (optional)
Instructions
For the Crust:
- Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan.
- In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until well combined.
- Press the mixture firmly into the bottom of the prepared pan.
- Bake the crust for 10 minutes, then set aside to cool.
For the Cheesecake Filling:
- In a large bowl, beat the cream cheese until smooth and creamy.
- Add the sugar and vanilla extract, and beat until well combined.
- Add the eggs one at a time, beating well after each addition.
- Mix in the sour cream, orange zest, lemon zest, orange juice, and lemon juice until well combined.
For the Citrus Swirl:
- Spoon the orange marmalade and lemon curd over the cheesecake batter.
- Use a knife or skewer to swirl the marmalade and curd into the batter.
To Bake:
- Pour the cheesecake filling over the cooled crust in the springform pan.
- Bake the cheesecake for 55-65 minutes, or until the center is almost set (it should still have a slight jiggle in the middle).
- Turn off the oven, crack the oven door, and let the cheesecake cool in the oven for 1 hour.
- Remove the cheesecake from the oven and let it cool to room temperature.
- Refrigerate for at least 4 hours, or overnight.
For the Decoration:
- Before serving, top the cheesecake with whipped cream.
- Arrange the orange slices, lemon slices, and dehydrated citrus slices on top.
- Garnish with mint leaves if desired.
